Pendleton is an oak barrel-aged whisky distilled in Canada. Before bottling, Hood River Distillers in Oregon adds glacier-fed spring water from Mt. Hood (Oregon’s highest peak). Pendleton Whisky has an uncommonly smooth taste and a rich, complex flavor.

Chartreuse VEP

The Chartreuse Order of the Carthusian monks was founded in 1084, which makes it one of the oldest religious orders in Christianity.  The Order was more than 500 years old when, in 1605, they received a special gift: a manuscript titled “An Elixir of Long Life”.  A long and complex recipe, it was not fully studied until 1737 by the monastery’s apothecary.

This “liqueur of health” was distributed into small villages in the area.  People were so fond of it that they drank it as a beverage, rather than taking it as medicine.  Realizing this, the monks made a milder version known today as “Green Chartreuse”.  Presently, only two monks have been entrusted by the Order with the production secrets of Chartreuse.  Over 130 herbs, plants, roots and leaves are incorporated into a base of wine alcohol.

Chartreuse VEP has been given special treatment, allowing it to reach exceptional quality.  It is made with the same secret formula but it has been subjected to long periods of aging in oak casks.  VEP is produced in a very limited quantity with a wax sealed cork, a back label wax stamped with the Chartreuse seal and presented in a wooden box marked with a branding iron.  Every bottle is identified by it’s own number.

It is a taste that has traveled the world from the Dutch East Indies, unique for its ability to both add depth and lift the aromas of citrus and chocolate.  From the late 17th to 19th century, in an age when “Punch” was a celebration of all things exotic – citrus, sugar and spice, no Punch was without a true Batavia Arrack.  Beyond these uses, Batavia Arrack is also found today in boutique European chocolates and cocktails at Bali resorts.

The Scarlet Ibis

This blend of three to five year aged Trinidad rums highlights the distinctive notes of the island’s small cask rum production.  The rich flavors drawn from the sugarcane are considered reflective of Trinidad’s diverse terrain, ranging from lush mountains to rainforest and rolling plains.

Velvet Falernum

Velvet Falernum is a longtime staple item of resorts and bars in Barbados, and today for its use in Tropical, Tiki and Caribbean drinks such as the Rum Swizzle, Mai Tai, Zombie, Royal Bermuda Yacht Club and Corn n’ Oil.  It is made from an infusion of spices and lime juice into sugar cane syrup and Barbados Rum.

Cardhu is a Speyside that has been unavailable in the United States for te past several years.  Luckily we have managed to get a few bottles.  Formerly all of Cardhu was being shipped to Japan but now there is a small allocation for North America.  Get this one while you can because there is not much available.
